Quick and Easy Little Diablo Tortilla Soup

8 cups chicken stock or broth

1 jar Little Diablo Mild Garlic or Medium Chipotle Salsa**

1 15 oz can petite diced tomatoes, undrained

1 or 2 large limes, juiced

8 oz can diced green chiles

2 cups cooked chicken, shredded

1/2 cup cilantro, snipped

salt and pepper to taste

1 cup cold water

1/3 cup flour or masa (corn flour)


Combine stock, salsa and tomatoes. Simmer for 10 minutes. Add lime juice, chiles,chicken and cilantro. Heat for an additional 10 in minutes, stirring often. Season with salt and pepper to taste. Increase heat and bring mixture to a very low boil.

Mix cold water and flour/masa until smooth. Stir into simmering soup. stirring until smooth and slightly thickened. Reduce heat and continue to simmer 10 minutes longer. Serve with garnishes.

pickeled jalapeno peppers                                sour cream

diced tomatoes                                                 tortilla strips or chips
