Chipotle Black Bean Chili (Vegetarian)

Serves 8-12

1 28 oz can diced tomatoes

1 28 oz can crushed tomatoes

1 15 oz can fire roasted diced tomatoes

2 15 oz cans black beans, rinsed

2 cups corn

1/4 cup quinoa

1 jar Little Diablo Medium Chipotle Salsa

2 cups water

1 large onion, 1 large red pepper and 1 large green pepper, diced small

3-6 cloves fresh garlic, smashed and chopped

2 tbsp. cumin

2 tbsp. dark chili powder

salt and pepper to taste

 

In a large stockpot combine tomatoes, beans, corn, salsa and veggies. Add quinoa, garlic, cumin and chili powder. Add 1 cup water. Simmer 15-20 minutes. Add water if needed. Salt and pepper to taste.  Garnish with cheese, sour cream, scallions. Serve with honey corn bread.

 

**You an also add 1 pound of a ground meat to this recipe.  Increase water to 2.5 cups as needed.
